Connect Beer tailpiece (barb + hex) to 90 degree elbow tailpiece

How to join 7/8"-14 nut, 1/4" or 3/16" barb and 5/8" G nut x 5/16" barb, and what stops it leaking.

Not compatible. Beer tailpiece (barb + hex) and 90 degree elbow tailpiece do not share a mating thread, so there is no adapter between them; fit the part that matches your hardware.

The part to buy

A straight tailpiece and a 90 degree elbow tailpiece do the same job, turning a shank or coupler thread into a barb, but you fit one or the other by the room behind the faucet, not both. The elbow bends the line to save depth.

Choose the elbow when a straight tailpiece would foul a wall or a neighbouring keg, and the straight one when there is depth to spare. Both seal the same way, a washer at the shank and a clamp at the barb.
