Connect CGA-580 nitrogen / beer-gas cylinder valve to CGA-320 CO2 cylinder valve

How to join 0.965"-14 NGO RH and 0.825"-14 NGO RH, and what stops it leaking.

Not compatible. CGA-580 nitrogen / beer-gas cylinder valve and CGA-320 CO2 cylinder valve do not share a mating thread, so there is no adapter between them; fit the part that matches your hardware.

The part to buy

CGA-580 (nitrogen, argon, beer-gas) is 0.965-14 NGO and CGA-320 (CO2) is 0.825-14 NGO, so a CO2 regulator will not screw onto a nitrogen tank and a nitrogen regulator will not screw onto a CO2 tank. The two are deliberately different sizes; there is no everyday adapter, you fit the regulator for the gas.

The larger CGA-580 thread is a safety feature that stops you feeding nitrogen where CO2 is expected. Do not chase a cross adapter to force it; buy the CGA-320 regulator for CO2 and the CGA-580 one for nitrogen or beer-gas, and label the cylinders.
